Zucchini Boats

I saw something like this on my friend Lauren's blog a couple years ago and wanted to try to make it myself.  We had a giant zucchini in our garden so I thought I'd give it a shot.  The pictures below show the process.  For the ground turkey I threw in some onion powder, garlic powder, Italian seasoning, and some salt and pepper.  I just used a can of diced tomatoes but I'm sure tomato sauce would work too (and Rach would like it more).  I baked them at 375 for 30 minutes.  Large fresh zucchini  Used our Pampered Chef melon baller to scrape the insides out  Cheese first (I only had cheddar)  Diced tomatoes from a can  Turkey Burger   More cheese (obviously)  Italian Bread Crumbs and Basil  Perfection!

Tortillas!

I found a recipe on Facebook a few weeks ago for homemade tortillas.  I tried them last week and they were a success.  In my ever so subtle quest to become healthier, I attempted to make them with whole wheat flour.  The recipe is as follows: 3 cups flour 1 tsp salt 1 tsp baking powder 1/3 cup oil 1 cup warm water Add dry ingredients and give a quick stir, then add the liquids.  As soon as it forms a ball or looks mixed, form 1.5-2" balls and roll them out with a rolling pin (or get a tortilla press from one of your favorite kitchen retailers).  Set your frying pan or cast iron griddle (ungreased!) on med (5-6) and cook on the first side until it begins to bubble. Flip it over for about 10-15 seconds and then flip again to make sure it looks done and ¡Olè! you have yourself some tortillas. Yields approx 12-14 tortillas depending on the size you make 'em. DIY Storage Bed

A couple weeks ago I was digging under my bed for my shoes (I'm really organized).  As I reached under there my hand was stabbed by a jagged piece of my box springs.  A little more investigating told me that 5 of the the 10 crossbars on there were cracked in half.   I had always wanted a storage bed but when I saw the prices ($299 and up) online I was taken aback.  I then found this link on Pinterest - Storage Bed Plans - and decided to give it a go.  I priced the wood and decided that with a few tweaks I could make this bed for about half the price of a pre-made storage bed.  Plus those IKEA beds and the like are made out of cheap particle board and veneer.  To be honest, I really thought it was going to take me months to get around to doing it because I know how I usually procrastinate.  I bought the wood on June 30th and started work on it July 4th.  I just finished it today and I have to say that I'm a bit shocked I actually complet...

Mason's First Photo Shoot

My good friend Dezi lives in Lyman, WY. We were headed to Rock Springs to a party and decided to stop and visit and take some pictures. She did a really amazing job and got some good pictures. Mason Ronald Huntsman

Mason was born on April 27, 2011 at 10:51 pm. He weight 6 lbs 13 ounces and was 21 inches long. He is 7 weeks old today. I can't believe how fast time has gone. I was in labor for 15 hours and then had to have a c-section. He had the cord wrapped around his neck and his hand on his forehead, so he wasn't coming on his own. I thought that I would upload a picture of my cute big baby bump. I feel like I have doubled in size over the last few weeks. I've had a really good pregnancy and I don't have much to complain about. I passed my glucose sugar test on the first try so that made me really happy. It's been great. We have 10 weeks left. I can't believe how fast it has gone.

We're having a baby boy in April! We're so freaking excited! I (brad) and more excited that I was right than I was about the outcome of the ultrasound. As a husband I only get to be right once in a while. HAHA. We are working on picking a name but are open to some suggestions. Let's hear your name choices for little baby boy huntsman.

We're Having a Baby!

I'm so excited to announce that we are having a baby in April. We have waited so long for this and neither Rachael nor I can wait for it. We'll keep it updated when we know more.

House Update

Last week, we found out that we were not going to close on our house before the end of the month. We quickly found a storage unit and started moving stuff in there. We had to file an extension because our lender is an idiot and didn't get his stuff together very quickly. Last Wednesday, we moved all of our "big stuff" out and little by little the rest of our stuff. I forgot how much "stuff" we have until we moved...and boy do we have a lot. My (Rachael) sister Lisa, came up for Friday and Saturday and helped me clean. Also, we had some very nice ladies from our ward come on Saturday morning and help us finish cleaning. So thanks to everyone's help we were able to be done on Saturday night. It looked so clean, cleaner than it was when we moved in. This morning (Monday) we had our move out inspection with the apartment. It went really well. I have been stressing over for a while. Chena chewed about 2 inches off the bottom of the door and we lost a 5 ...

Happy Anniversary Babe

Rach and I have been married for 2 years today. These have been the best 2 years of my life. I love Rachael so much. On Saturday we went snowmachining and I had never driven a snowmachine. She trusts me enough to sit on back while I drive like a madman. What a great wife! She gives me the inspiration to try to become a better man. She is my everything. I LOVE YOU RACHAEL!!!!!!!!!!!

We are buying a house

We just had our offer accepted to buy a house. We should close by the end of February. Pictures will soon follow.
